Blueberry Lemon Bread Pudding

INGREDIENTS:
1 package Dave’s Killer Bread Rock ‘N’ Rolls®, torn into pieces
4 eggs
2 Tbsp. melted butter, plus more to grease dish
2 cups organic whole milk
1/3 cup maple syrup, plus more to serve
1 Tbsp. freshly grated lemon zest
2 Tbsp. fresh lemon juice
1 tsp. cinnamon
1 tsp. vanilla extract
½ cup fresh blueberries, plus more to serve
3 Tbsp. powdered sugar, to serve
Directions:
Preheat oven to 350F and lightly grease an 8x10 baking dish with butter.
In a large bowl whisk together eggs, melted butter, milk, maple syrup, lemon zest, lemon juice, cinnamon, and vanilla extract.
Add torn rolls and stir to combine. Fold in fresh blueberries.
Pour into prepared baking dish.
Bake bread pudding 45-55 minutes, or until set and lightly golden on top. Remove from oven and let cool for 25 minutes before serving.
To serve sprinkle with powdered sugar and fresh blueberries, and drizzle with maple syrup. Enjoy!
