killer copycat filet o’ dave’s
INGREDIENTS:
Cabbage slaw:
4 cups shredded green cabbage
½ red onion, thinly sliced
3 Tbsp. mayonnaise
1 Tbsp. red wine vinegar
½ tsp. sea salt
½ tsp. black pepper
Filet O’ Dave’s:
2 Dave’s Killer Bread Burger Buns Done Right™
2 cod filets (~6 ounces each)
½ cup flour
2 tsp. garlic powder
1 tsp. mustard powder
2 eggs
1 Tbsp. Dijon mustard
½ tsp. sea salt
½ tsp. black pepper
1 cup panko breadcrumbs
1 ½ cup avocado oil
2 slices American cheese
2 Tbsp. tartar sauce
Directions:
Prepare cabbage slaw: add shredded cabbage to a large bowl with red onion, mayonnaise, red wine vinegar, sea salt and black pepper. Toss well to combine, set aside.
Dry each cod filet with a paper towel, set aside.
In a shallow dish combine flour, garlic powder and mustard powder. Whisk to combine, set aside.
In another shallow dish whisk together eggs, Dijon mustard, salt, and pepper. Set aside.
Add panko breadcrumbs to a final shallow dish.
Dredge each cod filet into the flour, followed by the egg mixture, and finally the panko crumbs until fully coated. Repeat with other piece of cod.
Add avocado oil to a deep pot and heat to 350 degrees. Fry cod filets for 3-4 minutes, flip and cook an additional 2 minutes or until golden brown and cooked through. Transfer cod to a cooling rack and immediately top with slice of American cheese to allow for cheese to melt.
Spread tartar sauce on the bottom of each bun. Top with cod, cabbage slaw and top bun. Enjoy immediately!
