killer copycat castle burgers

INGREDIENTS:

  • 1 package Dave’s Killer Bread Rock ‘N’ Rolls®, sliced in half

  • 1 onion, finely diced

  • 1 pound ground beef

  • ½ tsp. sea salt

  • ½ tsp. black pepper

  • 1 tsp. onion powder

  • 1 tbsp. olive oil

  • 1 cup shredded Colby Jack cheese

  • ¼ cup pickle chips, to serve

  • 3 Tbsp. ketchup, to serve

 

Directions:

  1. Add diced onion to a bowl and cover with ½ cup water, set aside.

  2. Add ground beef to a food processor along with sea salt, black pepper, onion powder, and 2 teaspoons of water and pulse until smooth.

  3. Line a large baking tray or cutting board with parchment paper. Add ground beef to center of parchment paper and top with another piece of parchment paper. Use a rolling pin to roll beef into a thin rectangle. Remove top piece of parchment paper and use a pizza wheel or edging tool to score, cutting into 12 equal squares (3 rows of 4). Make 5 holes in each square patty using your index finger. Lightly cover with plastic wrap and place tray in the freezer to firm for 15-20 minutes.

  4. Heat a large skillet over medium heat and drizzle with olive oil. Add diced onion (with water) and let cook 2-3 minutes. Arrange patties overtop onion mixture and cook until patties are browned on the edges, about 3-4 minutes.

  5. Cut slider buns in half. Put a bottom slider bun on each patty. Add top buns on top and around skillet to steam top bun. Continue cooking until patties are cooked through, about 2 more minutes. Carefully flip over each bottom bun with patty on top. Top each burger with a sprinkle of cheese and top with top bun. To melt cheese quicker, top with a heat-safe bowl and let cheese melt for 1-2 minutes.

  6. Remove sliders from skillet and serve with pickle chips and ketchup, enjoy immediately!
