easy breakfast sandwich, dkb-style
INGREDIENTS:
2 slices Dave’s Killer Bread White Bread Done Right®
1 Tbsp. butter
3 eggs, scrambled
¼ cup shredded pepperjack cheese
½ small avocado, sliced
4 pieces thinly sliced red onion
¼ cup arugula
Directions:
Add butter to a nonstick skillet over medium heat.
Add eggs and immediately place two slices of bread directly on top of eggs in skillet. Use two forks to carefully pick up bread slices and flip over, so that each slice of bread is coated in egg.
Allow egg and bread to cook for 2-3 minutes, or until egg is solid.
Carefully using a spatula flip over the entire egg and two slices of bread.
Add cheese, avocado, red onion, and arugula to slices of bread. Using a spatula, fold egg mixture and one slice of bread over the other slice of bread. Cook for 2 minutes, flip and cook an additional 2 minutes.
Use spatula to cut off excess egg on side.
Serve egg sandwich immediately and enjoy!
