Hot Honey Chicken Salad Sando
INGREDIENTS:
1 stalk celery, diced
½ red onion, diced
½ cup red grapes, sliced in half and then quartered
1 lemon, juiced
4 sprigs fresh dill, finely chopped
3 cups shredded rotisserie chicken
½ cup mayo
2 Tbsp. Dijon mustard
½ tsp. celery seeds
½ fuji apple, sliced
1-2 Tbsp. hot honey
Directions:
Prepare chicken salad: to a large bowl add celery, red onion, grapes, lemon juice, dill, rotisserie chicken, mayo, Dijon, and celery seeds. Stir to combine.
Add chicken salad to sandwich roll. Top with sliced apple and a drizzle of hot honey. Enjoy immediately!
Leftover chicken salad will keep in an airtight container in the refrigerator for up to 3 days.
