street corn grilled cheese

INGREDIENTS:

  • 4 slices Dave’s Killer Bread White Bread Done Right®

  • 2 Tbsp. mayo

  • 2 ears of fresh corn, corn kernels removed, or 1 ½ cups frozen corn kernels, thawed

  • 1 ½ cups shredded Colby jack cheese

  • 1 green onion, diced

  • ½ tsp. chili lime seasoning

 

Directions:

  1. Carefully remove corn kernels from fresh ears of corn (or thaw frozen kernels). Add kernels to a dry skillet over medium-high heat and cook until lightly charred, about 5-7 minutes, stirring frequently. Remove corn kernels from pan and set aside.

  2. Preheat a large nonstick skillet over medium heat.

  3. Spread mayo on one side of each slice of bread. Place bread, mayo side down, into preheated nonstick skillet. Top each bread with shredded Colby jack cheese, charred corn, green onion, and a sprinkle of chili lime seasoning. Top with remaining slice of bread, mayo side up.

  4. Cook grilled cheese 4-5 minutes per side, or until golden and cheese is melted.

  5. Remove from stove, slice, and enjoy immediately!
